Peach Bread:

Ingredients

Batter

  • 4 cups diced peaches
  • 5 cups all purpose flour
  • 1 cup graham wafer crumbs
  • 4 teaspoon baking powder
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon salt
  • 1 cup pureed peaches
  • 1/2 cup sour cream
  • 1/2 cup soft butter
  • 2 teaspoon vanilla
  • 6 eggs
  • 2 cups sugar

Topping:

  • 6 tablespoons flour
  • 6 tablespoons rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup cold butter
  • 1/2 teaspoon cinnamon

Method

Place the diced peaches into a bowl and add a 1/2 cup of sugar to the peaches and stir till the sugar is well mixed in. Set aside for later. Add the flour, graham crumbs, baking powder, baking soda, salt and cinnamon to a large bowl. Take a wire whisk and stir till everything is well blended; set aside. In a separate bowl combine the butter, sour cream and vanilla. Mix together with a wire whisk till well mixed. Add in the sugar and beat with a whisk till smooth and creamy; set aside. Before continuing you need to make the topping. Combine the brown sugar, flour, oats and cinnamon; mix till well blended. Add in the chunks of very cold butter. Using your hands mix together till the mixture resembles pea size lumps; set aside. Now, take the butter, sour cream mixture and start to slowly add in the eggs one at a time. Beat in each egg completely before adding the next one. Add in the pureed peaches and the cubed peaches and mix together. Add in the flour mixture and stir just till combined. Do not over mix. Pour into 2 5x9 inch greased loaf pans. Sprinkle the topping mixture on top of each pan and place into a 350 degree oven for 60 to 65 minutes. Or till the core of the bread reaches a temperature of 180F. Remove from oven and allow to rest in the pan for 10 minutes before removing from pans. Allow to cool on a wire rack.
