
Place sugar and butter into a large bowl, mix with an electric mixer on medium speed. Add egg and mix till creamy and fluffy ( about 3 minute) Add cereal, bananas, nuts and vanilla. Mix all together, till smooth. In another bowl sift together flour, baking powder, baking soda and salt. Slowly add the dry ingredients to the banana mixture. It's easier at this point to use a large wooden spoon to mix. Just mix till combined, (do not over mix). Pour out into a greased bread pan. Bake in a 350F oven for about 60 minutes. Allow the banana bread to stand for at least 15 minutes before removing from pan.
