Banana Nut Bread Recipe 1: Makes 2 loaves

Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 1/3 cup brown sugar firmly packed
  • 6 ripe bananas ( mashed )
  • 6 eggs
  • 1 cup buttermilk
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 3/4 cup hazelnuts

Method

Cream together butter and sugars (white and brown ) until creamy. Add 1 egg at a time and mix well. Add bananas and mix together. Add buttermilk. Mix till combined. In another bowl sift flour, baking powder, baking soda, cinnamon and salt together. Slowly add dry ingredients to the banana mixture. Mix just till moistened. Add chopped nuts and fold together. pour into 2 greased loaf pans. Place in a pre-heated 350F oven, bake for 60 minutes. Remove and allow to sit for 15 minutes before removing from pans.
