Ingredients
Dough:
- 3 cups all purpose flour
- 2/3 cup sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoon baking soda
- 1 to 1 1/4 cups lukewarm water
- oil for deep frying
Coating:
- 1/2 cup sugar
- 1 1/2 teaspoon cinnamon
Method

Add the flour, sugar, salt and baking soda to a large bowl and mix together.

Add in about 3/4 cup of lukewarm water and mix with a wooden spoon. Now, continue to slowly add more water, till you get a soft dough. You don't want it to be sticking to your hands. So, just add enough water to make a soft dough. Pour out onto a lightly floured surface and knead for a few minutes. The dough will become smooth and elastic.

Cover on the counter with plastic wrap for 1 hour. Now, cut the dough in half and place half the dough under the plastic wrap. This will stop it from drying out while you work on the other half.

Cut that piece of dough in half, then cut those pieces in half and then cut those in half; till you have 8 pieces of dough. Take a piece of dough and make a 10 inch stick.; set aside under some plastic wrap. Do the same with the other 7 pieces. Take your first stick and roll it out again to 18 - 20 inches in length.

Spray a very little amount of spray oil onto a flat surface. Place the 18 inch stick of dough on to the lightly sprayed surface. Get someone ( kids ) to hold the one end of the dough. Roll the dough "towards" yourself.

Pickup one end and place it back where you began, so you can roll it "towards" yourself again. Do this a few times till the dough becomes all twisted.

Now, bring the two ends together and pinch. Lift into the air and the dough will twist onto itself.

Place back onto the lightly oiled surface and pull to make it a little longer. Roll the dough "away" from yourself this time. Once again place the dough back where you started and twist away from yourself again. Do this a few times till all twisted. Bring the two ends together again and pinch tightly. Lift into the air and the dough will twist onto it's self again.
Place onto a piece of parchment paper and cover with plastic wrap. Now, do the same with the other piece. You should end up with 16 doughnuts. You can fry them now or place them into the fridge for up to 24 hours. To deep fry them heat oil to 350 - 375 degrees and fry for 40 seconds on one side. Then turn over and deep fry for another 40 seconds. Place onto a plate lined with paper towels. To remove some of the oil. Dip into a coating mixture while still hot. Serve and enjoy, these are so good fresh.
